日本の醸造学者、東京農業大学名誉教授。醤油・みりんの専門家として著書多数。
経歴：醪酒科卒業後、同大大学院で博士前期課程修了。助手、講師、助教授を経て、2002年に教授となる。2010年には短期大学部長となり、2019年に名誉教授となる。みりん研究会副代表なども務める。
受賞歴：1997年度日本醸造協会技術賞、2010年度日本醤油技術賞（研究・開発の部）、同年醤油功労賞。
代表的な出演番組：NHK総合テレビジョンの「うまいッ!」「あさイチ」など。ラジオ番組「久米宏 ラジオなんですけど」にも出演。

English Summary
Disseminating soy sauce technology to the world
Japanese brewing scholar and professor emeritus at Tokyo University of Agriculture. He has written many books as an expert on soy sauce and mirin.
Career: After graduating from the Department of Alcoholic Beverage, completed the master's program at the same university's graduate school. After working as an assistant, lecturer, and assistant professor, he became a professor in 2002. In 2010, he became dean of the junior college, and in 2019 he became professor emeritus. He also serves as vice president of the Mirin Research Group.
Awards: 1997 Japan Brewing Association Technology Award, 2010 Japan Soy Sauce Technology Award (Research and Development), 2010 Soy Sauce Achievement Award.
Representative programs: NHK General Television's ``Umai!'' and ``Asaichi''. He also appeared on the radio program ``Kume Hiroshi Radio Nandeshbuto''.
